Mozzarella is a mild, semi-soft cheese traditionally produced from the milk of water buffalo or cattle, originating from Campania in southern Italy. The cheese is created through a pasta filata (spun curd) process, wherein curds are heated, stretched, and molded into its characteristic shape. Fresh mozzarella has a white color, delicate flavor, and creamy texture with a slight tang; when aged briefly, it develops a subtle complexity. Buffalo mozzarella (mozzarella di bufala) is considered the gold standard, prized for its richer flavor and creamier consistency, while cow's milk versions are more widely available and slightly firmer. Low-moisture mozzarella, a variant developed for commercial applications, has extended shelf life and melting properties suited to processed foods and pizza production.

Culinary Uses

Mozzarella is fundamental to Italian cuisine and increasingly central to global cooking. Fresh mozzarella is served cold in caprese salads, alongside tomatoes and basil, or used as a delicate finishing element in composed dishes. Low-moisture mozzarella is the standard cheese for pizza, providing optimal melting and browning characteristics. The cheese is incorporated into baked pasta dishes (lasagna, baked ziti), layered into sandwiches, or melted into risottos and other preparations requiring a smooth, creamy texture.
