Beer is an alcoholic beverage produced by the fermentation of malted cereal grains, most commonly barley, with water, hops, and yeast. Originating in ancient Mesopotamia and Egypt, beer has evolved into countless regional styles distinguished by grain type, fermentation method, and hop variety. The flavor profile ranges from light and crisp to dark and roasted, with alcohol content typically between 3–10% ABV, though specialty styles may vary considerably. The brewing process involves malting (converting grain starches to fermentable sugars), mashing (extraction), boiling with hops for bitterness and aroma, and fermentation by either Saccharomyces cerevisiae (ale yeasts, warm fermentation) or Saccharomyces pastorianus (lager yeasts, cold fermentation).

Culinary Uses

Beer functions in the kitchen both as a beverage accompaniment and as a cooking ingredient. It is used to deglaze pans, enrich braises and stews (particularly in Belgian, German, and British traditions), and add depth to batters for fried foods. The carbonation in beer aerates batters, producing lighter, crispier textures in beer-battered fish and vegetables. Darker beers contribute complexity to beef stews and chocolate desserts, while lighter beers are employed in seafood preparations. Beer's acidity and bitterness cut through rich fats and complement hearty, fermented, and grilled foods. The alcohol typically evaporates during cooking, leaving subtle malt and hop character.
