Sift flour, baking powder, salt, and sugar together into a large mixing bowl.

Whisk together the egg yolks, beer, milk, and melted butter in a separate bowl until fully combined.

Pour the wet ingredients into the dry ingredients and stir until just combined; the batter should have small lumps remaining.

In a clean, dry bowl, beat the egg whites with an electric mixer or whisk until stiff peaks form.

Gently fold the beaten egg whites into the batter using a spatula, being careful not to deflate them; fold until just a few white streaks remain.

Heat a griddle or non-stick skillet over medium-high heat and lightly butter or oil the surface.

Pour ¼ cup batter onto the hot griddle for each pancake, leaving space between them.

Cook until bubbles form on the surface and the edges look dry, then flip carefully and cook the other side until golden brown, about 1 to 2 minutes.

Transfer cooked pancakes to a warm plate and repeat with remaining batter until all pancakes are cooked.
