Powdered sugar, also known as confectioners' sugar or icing sugar, is granulated sugar that has been ground into an extremely fine powder and mixed with a small amount of cornstarch or anti-caking agent to prevent clumping. The ingredient is produced by pulverizing crystalline sucrose, derived from sugar cane or sugar beets, into particles so fine they resemble flour. This processing dramatically increases the surface area of the sugar crystals, making the ingredient dissolve rapidly and integrate seamlessly into batters, frostings, and glazes. The texture is exceptionally smooth and light, with a brightness and fineness that distinguishes it from coarser sweetening agents.

Powdered sugar is essential in pastry work, confectionery, and baking, where its fine texture and rapid dissolution are critical. It serves as the primary ingredient in royal icing, buttercreams, fondants, and glazes for cakes, cookies, and pastries.
