1
Whisk together the 2 large eggs and 3 tablespoons granulated sugar in a medium bowl until pale and foamy, approximately 2-3 minutes.
2
Stir in the ¼ cup melted butter, 2 tablespoons milk, and 1 teaspoon vanilla extract into the egg mixture until well combined.
3
Gradually add the 1¾ cups all-purpose flour to the wet ingredients, stirring gently until a soft dough forms.
4
Knead the dough lightly on a floured surface for 1-2 minutes until smooth, then allow it to rest for 5 minutes.

5
Roll out the dough to approximately ¼-inch thickness and cut into desired shapes using a knife or cookie cutter.
6
Heat the vegetable oil in a deep skillet or heavy-bottomed pot to 350°F (175°C).
7
Carefully place a few dough shapes into the hot oil and fry for 1-2 minutes per side until golden brown and crisp.

8
Remove the fried cookies with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil.
9
Repeat the frying process with the remaining dough in batches, ensuring the oil returns to 350°F between batches.
10
Once all cookies are fried and cooled slightly, dust generously with powdered sugar while still warm.
