Baking soda, chemically known as sodium bicarbonate (NaHCO₃), is a white crystalline powder that occurs naturally as the mineral nahcolite and is also manufactured synthetically through the Solvay process. This alkaline compound is odorless and has a slightly salty taste. When heated or combined with acidic ingredients, baking soda rapidly decomposes to produce carbon dioxide gas, water, and sodium carbonate, making it a fundamental chemical leavening agent in baking. It differs from baking powder, which contains baking soda plus acidic components and starches.

Culinary Uses

Baking soda is essential in baking as a leavening agent, causing batters and doughs to rise by releasing CO₂ bubbles when activated by acids such as buttermilk, yogurt, vinegar, lemon juice, or cocoa. It is used in quick breads, cakes, cookies, pancakes, and muffins, typically in small quantities (¼ to 1 teaspoon per cup of flour). Beyond baking, baking soda can tenderize meats when used in marinades, enhance the browning of baked goods, neutralize acidic flavors in sauces, and reduce bitterness in certain vegetables. It is also valued in Asian cuisine for coating noodles and as a component in some dumpling doughs.
