Apricot Crumb Bars

This recipe came from the Hartman Estate Sale. It was obtained it as part of the purchase of the Family Collection from the Hartman Estate in Arlington, Texas in 1984.

Preheat oven to 350°F (175°C). Combine brown sugar, flour, oatmeal, baking soda, salt, and vanilla extract in a large bowl.

Cut the butter into small cubes and add to the dry mixture. Use a pastry cutter, fork, or fingertips to work the butter into the ingredients until the mixture resembles coarse breadcrumbs.

Press half of the crumb mixture firmly and evenly into the bottom of a greased 9x13-inch baking pan to form the base layer.

Spread the apricot jam in an even layer over the crumb base, leaving a small margin from the edges.

Distribute the remaining crumb mixture evenly over the jam layer, gently pressing down with the back of a spatula or your hands so it holds together.

Bake for 35 minutes until the top is lightly golden brown and the edges are set.

Remove from oven and allow to cool completely in the pan on a wire rack, about 1-2 hours, before cutting into bars.

Dust the cooled bars lightly with powdered sugar just before serving.
