Preheat the oven to 375°F and line a muffin tin with paper liners or lightly grease the cups.

Combine the oat bran cereal, whole wheat flour, ground cinnamon, baking powder, baking soda, and salt in a large bowl, whisking together until evenly distributed.

In a separate bowl, whisk together the unsweetened applesauce, honey, vegetable oil, egg, and pure vanilla extract until well combined and smooth.

Fold the wet ingredients into the dry ingredients using a spatula until just combined; do not overmix, as lumps in the batter are normal.

Chop the walnuts into small pieces and gently fold them into the muffin batter.

Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.

Bake in the preheated 375°F oven for 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
