flour tortillas

GrainsYear-round. Flour tortillas are shelf-stable products available continuously in grocery stores, though freshly made tortillas from specialized bakeries may have seasonal variations depending on local production schedules.

Flour tortillas provide carbohydrates from wheat flour and are a source of dietary fiber when made with whole wheat varieties; they are generally low in fat unless prepared with significant amounts of lard or shortening. Fortified flour tortillas may contain added B vitamins and iron.

About

Flour tortillas are thin, pliable flatbreads made from a simple dough of wheat flour, water, salt, and fat (typically lard or shortening), which are rolled flat and cooked on a griddle or comal until soft and slightly blistered. Originating in Mexico, flour tortillas represent an adaptation of the traditional corn tortilla to wheat flour, a grain introduced by Spanish conquistadors in the 16th century. The dough must rest after mixing to develop gluten and ensure pliability. Unlike corn tortillas, which are made from masa (corn dough), flour tortillas possess a softer, more tender crumb and greater flexibility, making them ideal for wrapping and rolling without tearing. Regional variations exist across Mexico and the southwestern United States, with differences in thickness, size, and fat content affecting texture and flavor.

Culinary Uses

Flour tortillas function as edible vessels in Mexican and Tex-Mex cuisines, serving as the foundation for burritos, quesadillas, enchiladas, fajitas, and wraps. They are warmed before serving to enhance pliability and are used to envelop fillings ranging from meat and beans to cheese and vegetables. Beyond their traditional Mexican applications, flour tortillas have become integral to contemporary fusion cooking, used for wraps in international cuisines and as bases for breakfast dishes. They may be fried to create crispy shells or layered in casseroles. Proper warming—whether over an open flame, in a dry skillet, or wrapped in a cloth—activates the gluten and improves texture and flavor.
