Moo Shu Pork with Veggies and Tortillas for Wraps

- boneless pork chops¾ poundcut into thin strips
- garlic3 clovesminced
- tbs dark Asian sesame oil2 unit
- scallions8 unitsliced
- bag pre-shedded carrots8 oz
- bag pre-shredded coleslaw10 oz
- hoisin sauce + more for brushing tortillas½ cup
- tbs reduced sodium soy sauce3 unit

Prepare the pork by arranging the thin strips on a clean cutting board and pat dry with paper towels to remove excess moisture.

Heat 1 tablespoon of dark Asian sesame oil in a large skillet or wok over medium-high heat until shimmering, about 1 minute.

Add the pork strips to the hot skillet in a single layer and cook undisturbed for 2-3 minutes until the underside begins to brown, then stir and cook until cooked through, about 3-4 minutes total.

Push the cooked pork to the side of the skillet and add the minced garlic to the empty space, stirring for about 30 seconds until fragrant.

Add the shredded carrots and coleslaw to the skillet along with the remaining 1 tablespoon of sesame oil, then toss everything together and cook for 2-3 minutes until the vegetables just begin to soften.

Pour the hoisin sauce and soy sauce over the pork and vegetables, stirring gently to combine and coat evenly. Cook for 1 minute to warm through.

Add the sliced scallions to the skillet and stir to incorporate, cooking for an additional 30 seconds just to wilt slightly.

Warm the flour tortillas by wrapping them in a damp paper towel and microwaving for 30-45 seconds, or heating them individually in a dry skillet for about 15 seconds per side.

Lightly brush each warm tortilla with additional hoisin sauce on one side using a pastry brush or the back of a spoon.

Spoon the pork and vegetable mixture down the center of each tortilla and fold or roll to form a wrap, serving immediately.
