Ingredients

- head Boston lettuce1 smallseparated into leaves

- avocado1 mediumdiced
- ¼ to ½ cup
Method

Heat the vegetable oil in a large skillet over medium-high heat.

Add the Canadian-style veggie bacon slices and cook until lightly browned and crispy on both sides.

Transfer the cooked veggie bacon to a paper towel-lined plate to drain excess oil.

Warm the flour tortillas in the same skillet for about 30 seconds per side, or wrap them in a damp cloth and microwave for 1 minute to make them pliable.

Lay each warm tortilla flat and arrange 2 slices of veggie bacon down the center of each tortilla.

Layer Boston lettuce leaves on top of the bacon, followed by the diced tomato, diced avocado, and diced mango if using.

Roll each tortilla tightly, folding in the sides first to contain the filling, then rolling from bottom to top.

Slice each wrap in half diagonally and serve immediately.
