Nuts & SeedsWalnuts are harvested in autumn (September–November in the Northern Hemisphere), with peak availability from late fall through winter. Dried and stored walnuts remain available year-round.

Rich in omega-3 fatty acids (particularly alpha-linolenic acid), antioxidants, and polyphenols, walnuts also provide fiber, magnesium, and phosphorus. A single ounce contains approximately 4 grams of plant-based protein.

About

The walnut (genus Juglans) is the edible seed of the walnut tree, native to southeastern Europe and southwestern Asia, though now cultivated globally in temperate climates. The most commonly consumed species is Juglans regia (Persian or English walnut), characterized by its hard, deeply ridged shell encasing a cream-colored kernel with a distinctive earthy, slightly bitter flavor and rich oil content.

Walnuts vary in size and shape depending on cultivar, with some producing larger, more uniform kernels preferred for commercial processing. The kernels feature natural partitions that facilitate natural division, and their composition of approximately 65% fat (predominantly polyunsaturated and monounsaturated) distinguishes them from other tree nuts.

Culinary Uses

Walnuts are integral to both sweet and savory cuisines worldwide. They are featured prominently in baking (cakes, brownies, breads), ground into butters and pastes, and used whole or halved in salads, grain dishes, and vegetable preparations. In Eastern European and Mediterranean cuisines, walnuts feature in sauces (such as walnut-pomegranate sauces in Persian cuisine) and as key components in traditional sweets and confections. They pair particularly well with fruits (figs, apples), cheeses, and bitter greens, and serve as a protein-rich component in plant-based cookery.
