orange juice concentrate

BeveragesYear-round. Orange juice concentrate is processed and shelf-stable, available consistently throughout the year, though production peaks during the orange harvest season (autumn through spring in the Northern Hemisphere).

Rich in vitamin C and antioxidants, with significant amounts of folate and potassium when reconstituted. Orange juice concentrate retains most micronutrients from fresh oranges, though processing and storage may reduce some heat-sensitive compounds.

About

Orange juice concentrate is a processed form of orange juice produced by extracting fresh juice from ripe oranges and removing most of its water content through evaporation, freezing, or freeze-drying methods. The result is a highly concentrated, shelf-stable product that retains the essential flavors, acids, and nutrients of fresh orange juice in a significantly reduced volume. When reconstituted with water in the appropriate ratio (typically 1 part concentrate to 3–4 parts water), it yields a beverage approximating fresh-squeezed orange juice. The concentrate is typically made from sweet orange varieties (Citrus × sinensis), with Florida, California, and Brazil being major producers.

Culinary Uses

Orange juice concentrate serves dual purposes in the kitchen: as a beverage when reconstituted with water, and as a culinary ingredient in both sweet and savory preparations. In baking and pastry work, it provides concentrated orange flavor to glazes, frostings, marinades, and desserts such as cakes, cookies, and custards. It is widely used in sauce-making for poultry and pork, in vinaigrettes and salad dressings, and as a flavor base in beverages including smoothies, cocktails, and teas. The concentrate's intensity allows chefs to impart citrus character without the dilution that fresh juice would introduce, making it particularly valuable in applications where water content must be carefully controlled.

I take the whole amount of fruit (10 cups) and make a nice looking mixture. I don't necessarily use the amounts shown. If the candied fruit is on sale, i just use more of it than the raisins.
