Nutty Citrus Rice

Method

Melt butter or margarine in a large skillet over medium heat.

Add sliced green onions to the skillet and sauté for 1–2 minutes until fragrant and slightly softened.

Stir in chopped walnuts and cook for 1 minute, stirring frequently to prevent browning.

Add cooked rice and wild rice to the skillet, breaking up any clumps with a wooden spoon.

Pour in thawed frozen orange juice concentrate and add grated orange peel, stirring to distribute evenly throughout the rice mixture.

Stir in golden raisins, salt, and ground black pepper, mixing until all ingredients are well combined.

Cook over medium heat for 3–4 minutes, stirring occasionally, until the rice is heated through and the orange juice is absorbed.
