Summer Strawberry Orange Cups

Rinse the strawberries under cool water and hull them, removing the green tops. Reserve 4 whole strawberries for garnish and slice the remaining berries into quarters.

Sprinkle unflavored gelatin over 2 tablespoons of cool water in a small bowl and let sit for 1 minute to bloom.

Pour 2 tablespoons of boiling water over the bloomed gelatin and stir for 1 minute until completely dissolved.

Add the thawed frozen orange juice concentrate to the gelatin mixture and stir until well combined.

In a separate bowl, whisk together the milk, vanilla extract, and optional sugar if desired.

Pour the milk mixture into the gelatin and orange juice mixture, stirring gently until fully incorporated and smooth.

Divide the sliced strawberries evenly among 4 serving cups or glasses, placing them at the bottom of each cup.

Pour the orange gelatin mixture evenly over the strawberries in each cup, filling to about 1 inch from the rim.

Refrigerate the cups for at least 2 hours until the gelatin is set and the mixture has a firm, spoonable consistency.
