Cocoa powder is a dark, finely ground powder derived from fermented, roasted, and processed cacao beans (Theobroma cacao), the fruit of a tropical tree native to Central and South America. Two primary types are distinguished by processing method: natural (or non-alkalized) cocoa, which retains more acidity and fruity notes, and Dutch-processed (alkalized) cocoa, treated with an alkali to neutralize acidity, resulting in a darker color and mellower flavor. The fat content typically ranges from 10-25% depending on the degree of cocoa butter removal during processing.
