Method
1
In a mixing bowl, combine flour, cocoa powder, brown sugar, and a pinch of salt. Add the egg yolks and softened butter, then mix and knead until a smooth, firm dough forms.
10 minutes
2
Wrap the dough in plastic wrap and let it rest at room temperature to allow the ingredients to fully bind together.
15 minutes
3
On a lightly floured surface, roll out the dough to a thin sheet, then cut or pass it through a pasta machine to form thin noodle-like strands.
10 minutes
4
Bring a pot of lightly salted water to a gentle boil and cook the chocolate noodles until just tender, then drain and set aside.

5
Split the vanilla stick lengthwise and scrape out the seeds. In a saucepan over low heat, warm the milk with the vanilla pod and seeds to infuse the flavor.
5 minutes
6
Remove the vanilla pod from the milk, then whisk in the mascarpone and powdered sugar until the sauce is smooth, creamy, and fully combined.
5 minutes
7
Plate the warm chocolate noodles in a serving bowl or glass and pour the vanilla mascarpone sauce generously over the top.
8
Serve immediately while warm, optionally dusting with a little extra cocoa powder or powdered sugar for garnish.
