About

Brandy is a distilled spirit produced by fermenting and distilling wine or other fruit-based liquids, typically containing 35-60% alcohol by volume. The term derives from the Dutch brandewijn ("burnt wine"), referring to the heating process used in distillation. The production process involves fermenting grape juice or other fruits, distilling the resulting liquid in copper pot stills or column stills, and aging the spirit in wooden barrels—traditionally oak—which imparts color, flavor, and complexity. Cognac and Armagnac, produced in specific French regions, represent the most regulated and prestigious brandy categories, while brandies are also produced from grapes, apples, plums, cherries, and other fruits worldwide. The character of brandy is determined by the source material, distillation method, barrel type, and aging period, ranging from young, sharp spirits to smooth, complex aged expressions.

Culinary Uses

Brandy serves multiple roles in the kitchen: as a flambéing spirit for finishing dishes with dramatic presentation and alcohol reduction; as a deglazing agent that lifts fond from pan bottoms to build sauces; and as a flavor component in marinades, reductions, and braised dishes.
