Combine sugar and water in a large skillet over medium heat, stirring until the sugar dissolves completely, about 2 minutes.

Add the mango jam to the skillet and stir well to incorporate it into the syrup.

Increase heat to medium-high and add the sliced mangos to the skillet, gently tossing to coat with the syrup mixture.

Cook the mangos for 2 minutes, stirring occasionally, until heated through.

Add the lemon juice to the skillet and stir to combine.

Pour the brandy around the pan in a circular motion, then immediately tilt the pan or carefully ignite the brandy with a long lighter or match to create the flame.

Allow the flame to burn for about 30 seconds to 1 minute until it subsides naturally, swirling the pan gently to distribute the heat.

Remove the skillet from heat and let cool for 1 minute before serving.

Place a scoop of vanilla ice cream in each of 4 serving bowls and spoon the warm flaming mangos and syrup over the top.
