Maple syrup is a concentrated sweetener produced from the sap of maple trees (genus Acer), primarily the sugar maple (Acer saccharum), native to North America. The production process involves tapping the xylem sap in early spring, then boiling it down to concentrate the natural sugars from approximately 2% to 67% sugar content. The resulting amber to dark brown liquid exhibits a characteristic maple flavor profile—complex, with notes of caramel, vanilla, and subtle woody undertones. Maple syrup is classified into four grades based on light transmittance: Golden (delicate), Amber (rich), Dark (robust), and Very Dark (strong), each reflecting different stages of the boiling process and flavor intensity.

Maple syrup functions as both a sweetener and flavoring agent in diverse culinary applications. It is traditionally used to sweeten pancakes, waffles, and oatmeal in North American breakfast cuisine, but extends to glazes for ham and bacon, barbecue sauces, and vinaigrettes. In baking, it adds depth to cakes, cookies, and pastries, though its liquid nature requires adjustment of other wet ingredients.
