Fruit Compote

This topping is good on non-dairy frozen desserts, pancakes and French toast.

Ingredients

  • fresh or frozen fruit of your choice (suggestions include strawberries
    raspberries, blueberries, peaches, pineapple or any combination thereof)
    ½ lb
  • 1 cup
  • 3 tbsp
  • 6 tbsp

Method

Combine water and arrowroot powder in a small bowl, whisking until smooth and free of lumps.

Place fresh or frozen fruit in a medium saucepan over medium heat, stirring occasionally as the fruit begins to release its juices.

Pour the arrowroot mixture into the saucepan with the fruit, stirring constantly to combine evenly throughout.

Add maple syrup to the saucepan and stir well until all ingredients are incorporated.

Simmer over medium heat, stirring frequently, until the mixture thickens and becomes glossy in appearance.

Remove from heat and allow the compote to cool for a few minutes, during which time it will continue to thicken slightly.

Transfer to serving bowls or jars and serve warm or chilled as desired.
