Broiled Butterscotch Rice Pudding

Combine uncooked rice, water, and salt in a saucepan. Bring to a boil over high heat, then reduce heat to low and cover.

Cook the rice until tender and water is absorbed, approximately 15-20 minutes.

Transfer cooked rice to a baking dish and stir in the maple extract.

Prepare the butterscotch pudding mix according to package directions using the 2 cups milk. Pour the prepared pudding over the rice and stir gently to combine.

Dot the top of the rice mixture with 1 tablespoon butter or margarine.

In a small bowl, combine maple syrup, melted butter or margarine, and shredded coconut to create the topping.

Spread the coconut topping mixture evenly over the rice pudding.

Preheat the broiler to high.

Place the baking dish under the broiler 4-6 inches from the heat source. Broil until the coconut topping is golden brown and caramelized, about 2-3 minutes, watching carefully to prevent burning.
