Long-grain rice refers to varieties of Oryza sativa with grains that measure 6-8 millimeters in length and maintain a length-to-width ratio of at least 2.5:1 when milled. Long-grain varieties are characterized by slender, separate grains that remain firm and individual when cooked, with a lower starch content than short- or medium-grain varieties. Common long-grain types include Basmati, Jasmine, Carolina, and standard white or brown long-grain rice. The grains typically have a neutral to slightly floral flavor profile depending on variety, with Basmati and Jasmine offering more aromatic characteristics.

Long-grain rice is used extensively across Asian, Latin American, and Western cuisines as a versatile staple. Its light, fluffy texture when cooked makes it ideal for pilafs, biryani, risotto-style dishes, and simple steamed accompaniments to curries and stir-fries. In Latin American cuisine, long-grain rice forms the foundation of dishes like arroz con pollo and bean-and-rice preparations. The separated grain structure also makes it suitable for fried rice applications, as individual grains absorb sauces without clumping.
