Cheddar is a hard, aged cheese originating from the village of Cheddar in Somerset, England, though the style is now produced worldwide. The cheese is made from cow's milk through a process involving curd cutting, heating, and a technique called "cheddaring," in which curds are stacked and turned to expel whey before being milled and salted. Traditional cheddar is characterized by its firm, slightly crumbly texture and ranges in color from pale yellow to deep orange, depending on the addition of annatto (a natural colorant) and the age of the cheese. The flavor profile is complex and develops with aging: younger cheddars (3-6 months) are milder and creamier, while mature and extra-mature varieties (1-3+ years) develop sharp, tangy, and sometimes nutty notes with pronounced crystalline texture.

Culinary Uses

Cheddar is one of the most versatile cheeses in global cuisine, equally suited to eating on its own, in sandwiches, or as a cooking ingredient. Its melting properties make it ideal for cheese sauces, gratins, and baked dishes; it is fundamental to Welsh rarebit, English cheese toasties, and American mac and cheese. Cheddar also features prominently in burgers, soups, and cheese boards. The firmer texture of aged cheddar makes it suitable for grating and shaving as a condiment, while younger, softer varieties are better suited for melting applications.
