Granulated sugar is refined sucrose crystallized into small, uniform granules derived primarily from sugarcane (Saccharum officinarum) or sugar beets (Beta vulgaris). The result is a white, free-flowing crystalline substance with a sweet taste and neutral flavor profile, containing approximately 99.9% pure sucrose by weight. Unlike other sugar forms, granulated sugar's uniform crystal structure and moisture content (approximately 0.03%) make it ideal for precise measurement in recipes.

The primary distinction among granulated sugars lies in crystal size and processing method; standard granulated sugar represents the most common commercial form, while superfine (caster) sugar features smaller crystals and muscovado or demerara represent unrefined or partially refined variants with molasses content.
