Granulated sugar is refined sucrose crystallized into small, uniform granules derived primarily from sugarcane (Saccharum officinarum) or sugar beets (Beta vulgaris). The production process involves extracting juice from the source plant, purifying it through filtration and chemical treatment, then evaporating water and crystallizing the sucrose under controlled conditions to produce crystals of consistent size (typically 0.5–2 mm in diameter). The result is a white, free-flowing crystalline substance with a sweet taste and neutral flavor profile, containing approximately 99.9% pure sucrose by weight. Unlike other sugar forms, granulated sugar's uniform crystal structure and moisture content (approximately 0.03%) make it ideal for precise measurement in recipes.

The primary distinction among granulated sugars lies in crystal size and processing method; standard granulated sugar represents the most common commercial form, while superfine (caster) sugar features smaller crystals and muscovado or demerara represent unrefined or partially refined variants with molasses content.

Culinary Uses

Granulated sugar serves as the foundational sweetening agent across virtually all culinary traditions and applications. In baking, it creams with fats to incorporate air and structure cakes, cookies, and pastries; in candy and confectionery, it dissolves into syrups and crystallizes into hard candies and fondants; in beverages, it sweetens teas, coffees, and cocktails; and in preserves, it functions as both sweetener and preservative through osmotic action. Its neutral flavor and consistent crystal structure allow precise measurement and predictable caramelization at high temperatures, making it essential for sauce reductions, glazes, and caramelized preparations. In savory cooking, small quantities balance acidity in tomato-based sauces and dressings without imparting obvious sweetness.
