Egg whites are an excellent source of high-quality protein (approximately 3.6g per large egg white) with minimal fat and carbohydrates. They contain important minerals including potassium, magnesium, and selenium, along with the antioxidant enzyme lysozyme.
About
Egg white, also called the albumen, is the clear, gelatinous fluid that surrounds the yolk of a bird egg, most commonly from domesticated hens (Gallus gallus domesticus). Chemically, it consists of approximately 90% water and 10% proteins, primarily ovalbumin, along with smaller quantities of ovotransferrin, ovomucoid, and lysozyme. The albumen exists in four distinct layers of varying density and viscosity, transitioning from the thin outer albumen to the thick inner albumen surrounding the chalazae (the cord-like structures anchoring the yolk). Egg whites are colorless to pale yellow, with a neutral to slightly sulfurous aroma when raw, and become opaque white when coagulated by heat above 60°C (140°F).
The primary culinary value of egg white lies in its protein structure, which responds predictably to heat, mechanical agitation, and chemical interaction. This property makes it indispensable in a wide range of culinary applications, from meringues to clarification agents.
Culinary Uses
Egg whites function as a versatile binding, leavening, and clarifying agent across numerous cuisines. In French cuisine, they are whipped to form meringues for pavlovas and as a base for macarons, soufflés, and mousses. In Asian cooking, they are incorporated into dim sum fillings, fish balls, and cakes for texture. Egg whites are essential in the preparation of angel food cake, chiffon cakes, and Swiss meringue buttercream. They serve as a clarifying agent in consommé production and in the fining of wines and broths. In cocktail preparation, egg whites create a silky mouthfeel and stable foam in drinks like pisco sours and whiskey sours. Raw or lightly coagulated egg whites appear in some traditional dishes, such as Japanese tamago or egg custards. Proper whisking technique is crucial to achieve maximum volume and stability when aerating.
