Egg white, also called the albumen, is the clear, gelatinous fluid that surrounds the yolk of a bird egg, most commonly from domesticated hens (Gallus gallus domesticus). Chemically, it consists of approximately 90% water and 10% proteins, primarily ovalbumin, along with smaller quantities of ovotransferrin, ovomucoid, and lysozyme. The albumen exists in four distinct layers of varying density and viscosity, transitioning from the thin outer albumen to the thick inner albumen surrounding the chalazae (the cord-like structures anchoring the yolk). Egg whites are colorless to pale yellow, with a neutral to slightly sulfurous aroma when raw, and become opaque white when coagulated by heat above 60°C (140°F).
