Commercial cow milk is typically pasteurized (heat-treated to eliminate pathogens) and may be homogenized (fat particles mechanically broken down for uniform texture). Raw milk, unpasteurized and unhomogenized, remains available in some regions and exhibits pronounced flavor characteristics reflecting terroir and season.
