Method
1
Preheat oven to 350°F. Grease a 9x13-inch baking pan with butter or cooking spray.
2
Cream together 1 cup margarine and 2 cups sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.
2 minutes
3
Beat in 4 eggs one at a time, mixing well after each addition. Stir in 1 teaspoon vanilla.
4
In a separate bowl, combine 1 1/2 cups all-purpose flour and 1/3 cup cocoa powder. Whisk together to break up any cocoa lumps.
5
Fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
6
Stir in 1 1/2 cups chopped pecans until evenly distributed throughout the batter.
7
Pour batter into the prepared baking pan and spread to even thickness. Bake for 30 minutes until a toothpick inserted in the center comes out with a few moist crumbs.
30 minutes
8
Remove from oven and immediately sprinkle the entire surface with 1 bag (6 1/4 oz.) miniature marshmallows. Return to oven for 2-3 minutes until marshmallows are just softened.
3 minutes
9
Cool the brownie layer completely, about 15-20 minutes.
10
Prepare the frosting by melting 1/2 cup margarine, then whisk in 1/3 cup milk and 3 tablespoons cocoa powder until smooth.
2 minutes
11
Sift in 1 pound powdered sugar gradually, stirring constantly to avoid lumps. Add 1 teaspoon vanilla and mix until frosting reaches a spreadable consistency.
12
Spread frosting evenly over the cooled brownies. Allow to set before cutting into squares and serving.
