Cinnamon Rolls - Don't go to Cinnabon

Heat the milk to 110°F (just warm to the touch). Combine the warm milk, 2 1/4 tsp yeast, 1/2 cup granulated sugar, and 2 room temperature eggs in a large bowl, stirring until the yeast dissolves completely.

Add 4 1/2 cups all-purpose flour and 1/3 cup melted margarine to the wet mixture. Mix until a shaggy dough forms, then knead for 8-10 minutes by hand until smooth and elastic.

Place the dough in a lightly oiled bowl, cover with a damp towel, and let rise in a warm place for 1 hour until doubled in size.

Combine 2 tablespoons cinnamon and 3/4 cup brown sugar in a small bowl, then sprinkle evenly over the buttered dough.

Starting from one long edge, roll the dough tightly into a log. Cut the log into 12 equal rolls using a sharp knife or dental floss.

Pour 3/4 cup melted butter into a 9x13 inch baking pan and sprinkle 3/4 cup brown sugar evenly over it. Arrange the 12 rolls seam-side down in the pan.

Cover the pan loosely with plastic wrap and let the rolls rise for 30 minutes until puffy and nearly doubled.

Preheat the oven to 350°F. Bake the rolls for 20-25 minutes until the tops are golden brown.

While the rolls bake, prepare the frosting by beating together 3 oz softened cream cheese, 1/4 cup softened butter, 1/2 teaspoon vanilla, and 1/8 teaspoon salt until smooth and creamy.

Gradually add 1 1/2 cups confectioner's sugar to the cream cheese mixture, beating until light and fluffy with no lumps.

Remove the rolls from the oven and let cool for 2-3 minutes. Spread or drizzle the cream cheese frosting generously over the warm rolls while they are still in the pan.
