sweet onion

ProduceSweet onion seasons vary by cultivar and region: Vidalia onions peak April through June, Walla Walla from June through September, and Texas 1015 from October through April. Some varieties are available year-round from different growing regions.

Sweet onions are good sources of vitamin C and antioxidants, particularly quercetin and other flavonoids. They also provide dietary fiber and contain organosulfur compounds beneficial for cardiovascular health, though in lower concentrations than pungent onion varieties.

About

Sweet onions are cultivars of Allium cepa (common onion) bred or grown to contain higher sugar content and lower pyruvic acid levels, resulting in a milder, sweeter flavor profile than standard yellow or white onions. Native to regions with specific soil composition and climate conditions, sweet onions are characterized by their larger size, thinner papery skins, and higher water content compared to storage onion varieties. Major cultivars include Vidalia (Georgia, USA), Walla Walla (Washington, USA), Texas 1015, and Maui Sweet. The sweetness develops through the accumulation of fructose and glucose during the growing season, particularly in areas with low-sulfur soil.

Culinary Uses

Sweet onions are used in raw applications where their mild character shines, including slaws, salads, and salsas. They are also popular for caramelizing, grilling, and roasting, where their natural sugars concentrate and deepen. In French cuisine, they feature prominently in gratinéed onion tart (pissaladière) and soups. Sweet onions are less suitable for long-term storage than pungent varieties but excel in fresh preparations, sandwiches, and as garnishes. They pair well with acidic elements such as vinegar or citrus to balance their sweetness.
