Ingredients
- sweet onion1 largesliced fine
- – 4 large cubanelle / Sicilian peppers3 unitseeded and sliced fine
- links spicy Italian-style soy "sausage"4 unitsliced into pennies
- couple cloves of garlic1 unitcrushed
- lots of good1 unitdark-green olive oil
- coarse-ground pepper1 unit
- 1 unit
- vegan hero rolls1 unithard-grain semolina is best!
- amount of vegan red wine vinegar1 small

Heat the olive oil in a large skillet over medium heat. Add the sliced sweet onion and cook until softened and translucent, about 5 minutes.

Add the crushed garlic to the skillet and cook for 1 minute, stirring constantly until fragrant.

Add the sliced cubanelle peppers to the skillet and cook for about 8 minutes, stirring occasionally, until the peppers begin to soften.

Push the vegetables to the side of the skillet and add the sliced spicy Italian-style soy sausage in the center. Cook for 3–4 minutes until the sausage begins to brown.

Stir the sausage together with the peppers and onions, combining everything evenly throughout the skillet. Continue cooking for 2–3 minutes.

Drizzle the red wine vinegar over the mixture and stir to combine. Season with salt and coarse-ground pepper to taste.

Remove the skillet from heat and let the mixture rest for 2 minutes to allow flavors to meld.

Slice each vegan hero roll lengthwise without cutting all the way through, keeping the two halves connected. Gently open each roll to create a pocket for filling.

Divide the pepperoni and pepper mixture evenly among the four hero rolls, spooning it onto the bottom half of each roll. Close the top half gently over the filling.

Serve the sandwiches while warm, wrapped in paper if desired for easy handling.
