Slice the large sweet onion into ¼-inch thick rings, separating them gently to create individual rings for frying.

Pour the skim milk into a shallow bowl and place the breadcrumbs in another shallow bowl, stirring together the chili powder (if using) and salt into the breadcrumbs.

Dip each onion ring into the skim milk to coat evenly, then immediately dredge in the seasoned breadcrumb mixture, pressing gently so the coating adheres.

Heat the 1 tablespoon of vegetable oil in a large skillet over medium-high heat until shimmering, about 1-2 minutes.

Working in batches to avoid overcrowding, carefully place the breaded onion rings into the hot oil and fry for 2-3 minutes until the bottom is golden brown.

Flip the onion rings and fry for another 2-3 minutes until the second side is golden brown and the coating is crispy.
