Avocado-stuffed Chicken Breasts
This is a baked chicken dish, stuffed with an avocado mixture that looks and tastes beautiful.

- avocados2 unitpeeled, pitted and sliced

Toss the avocado slices with 2 tbsp of lime juice to prevent browning and set aside.

Season both sides of each pounded chicken breast with lemon pepper and garlic powder, distributing evenly.

Lay out one pounded chicken breast and arrange avocado slices down the center, then top with a portion of minced basil leaves.

Roll the chicken breast tightly around the avocado and basil filling, tucking in the sides to enclose the filling completely.

Repeat the filling and rolling process with the remaining three chicken breasts.

Combine the diced tomato, chopped sweet onion, remaining 1 tbsp of lime juice, and cracked peppercorns in a small bowl to create a fresh salsa.

Heat a large skillet over medium-high heat and lightly oil the surface.

Place the rolled chicken breasts seam-side down in the hot skillet and cook undisturbed for 5-7 minutes until the underside is golden brown.

Carefully flip each chicken breast and cook the other side for 5-7 minutes until golden and the internal temperature reaches 165°F (74°C).
