About

Snow peas (Pisum sativum var. saccharatum) are a legume variety cultivated for their edible immature seed pods. Originating in Central Asia and later developed in China, they feature flat, tender pods containing small, underdeveloped peas. The entire pod is consumed, including both the pod wall and the small seeds within, which distinguishes them from garden peas. Snow peas have a delicate, sweet flavor with a subtle grassy note and maintain a crisp texture when properly cooked. The pods are thin and pliable, typically 2.5 to 3.5 inches long, with a bright green color when fresh.

Varieties vary slightly in size and sweetness; popular cultivars include 'Oregon Sugar Pod,' 'Mammoth Melting,' and 'Golden Sweet,' the latter producing yellow pods. They are closely related to snap peas but differ in that snow peas have thinner, more tender pods designed to be consumed before the peas mature.

Culinary Uses

Snow peas are a staple in Asian cuisines, particularly Chinese stir-fries, where their crisp texture and subtle sweetness contribute essential textural contrast. They are commonly featured in pad thai, Vietnamese spring rolls, and Japanese tempura. In Western cooking, snow peas appear in salads, as crudités, and in light pasta dishes. The ingredient is best prepared by removing the string along the pod's edge, then briefly cooked—stir-fried, blanched, or eaten raw—to preserve their crispness. They pair well with garlic, ginger, sesame, soy sauce, and light vinaigrettes. Quick cooking (1-3 minutes) prevents overcooking and maintains their tender-crisp quality.
