Cook the rice noodles according to package directions, then drain and rinse with cold water until cool to prevent sticking.

While noodles cook, whisk together orange juice, olive oil, minced garlic, five-spice powder, salt, and pepper in a small bowl to create the dressing.

Place the cooled noodles in a large mixing bowl and add the steamed snow peas, sliced red bell pepper, orange segments, sliced mushrooms, and bean sprouts.

Pour the prepared dressing over the noodle and vegetable mixture and toss gently but thoroughly until all ingredients are evenly coated.
