Poppy seeds are the small, dark, kidney-shaped seeds of the opium poppy (Papaver somniferum), a flowering plant native to the Eastern Mediterranean and Western Asia. These seeds are harvested from the mature seed pods and are approximately 1-2 millimeters in length. Poppy seeds have a mild, slightly nutty flavor with subtle earthiness and a faintly sweet undertone. The seeds contain minimal alkaloid content compared to the plant's other parts, making them safe for culinary use. They are commonly sourced from Central European (particularly Czech and Hungarian), Indian, and Turkish cultivations, with variations in color from pale gray-white to dark blue-black depending on variety and region.

The seeds are employed whole or ground into a paste. Common varieties include white poppy seeds (primarily from India) and blue or slate-colored poppy seeds (from Central Europe). Their tiny size and hard exterior require soaking or grinding to release their flavor compounds fully.

Culinary Uses

Poppy seeds are employed across numerous culinary traditions as both a garnish and a flavoring agent. In Central European and Jewish cuisines, ground poppy seed paste (mohn) is a traditional filling for pastries, particularly in Eastern European Jewish baked goods and Polish makowiec (poppy seed cake). The seeds garnish breads, rolls, bagels, and savory dishes throughout Eastern Europe and India. In Indian cuisine, white poppy seeds are ground into cooking pastes that thicken curries and add subtle flavor depth. They are also used in Turkish and Middle Eastern pastries and confections.
