Preheat oven to 350°F (175°C) and grease a standard loaf pan with oil or nonstick spray.

Combine soft tofu, honey, sunflower oil, and vanilla extract in a blender or food processor until smooth and creamy.

Transfer the blended mixture to a large mixing bowl and stir in the mashed banana and egg until well incorporated.

In a separate bowl, whisk together whole wheat pastry flour, baking powder, baking soda, and salt.

Gently fold the dry ingredients into the wet ingredients until just combined; do not overmix.
