Chocolate chips are small, discrete pieces of chocolate produced from cocoa solids, cocoa butter, and other ingredients, typically formed through tempering and portioning processes. Originally developed in the 1930s when Ruth Graves Elherson added chopped Nestlé semisweet chocolate to butter cookie dough, the modern chocolate chip evolved into standardized morsels designed to hold their shape during baking rather than melt completely into batter. Common varieties include semisweet (containing moderate cocoa solids, typically 50-62% cacao), dark chocolate chips (higher cocoa content, 70% cacao and above), milk chocolate chips (lower cocoa content with added milk solids), and white chocolate chips (containing cocoa butter but no cocoa solids). The composition typically includes cocoa, sugar, cocoa butter, milk powder, lecithin as an emulsifier, and vanilla for flavor.

Culinary Uses

Chocolate chips are primarily used in baked goods, most famously in chocolate chip cookies, but also in brownies, muffins, pancakes, and quick breads. They are employed in both sweet and savory applications, appearing in trail mixes, granola, ice cream, mousse, and chocolate chip pancakes. In professional pastry work, chocolate chips serve as a convenient alternative to chopped chocolate for even distribution throughout batters and doughs.
