Brew 1 cup of strong coffee and allow it to cool to room temperature, approximately 10 minutes.

Combine the cooled coffee and 1/2 cup sugar in a blender, blending until the sugar is completely dissolved.

Add 3 cups of mocha-flavored soymilk to the blender and blend until well combined.

Add the 2 (6-oz.) containers of vanilla soy yogurt and 1 teaspoon vanilla extract to the blender and blend until smooth.

Fold in 1 cup of chocolate chips if desired, stirring gently by hand rather than blending to keep the chips whole.

Divide the mixture into 4 serving glasses, filling each three-quarters full.

Freeze for 2 to 3 hours until the mixture reaches a slushy, freeze-like consistency that can be served with a spoon or smoothie straw.
