Black beans (Phaseolus vulgaris) are a legume native to Mesoamerica and Central/South America, domesticated over 7,000 years ago. They are small, oval-shaped beans with a dark, glossy black exterior and creamy white interior flesh. The beans have a mild, slightly earthy flavor with subtle sweetness, and a firm but tender texture when properly cooked.

Black beans are a staple ingredient in Latin American, Caribbean, and increasingly American cuisines. They are available year-round in dried form, canned form, and occasionally fresh in specialty markets during harvest season. The dried beans require soaking and simmering for 1-2 hours, while canned varieties offer convenience for quick meal preparation.

Culinary Uses

Black beans are used extensively throughout Latin American and Caribbean cuisines as a foundational protein source. They appear in iconic dishes such as Cuban black beans and rice (moros y cristianos), Brazilian feijoada, Mexican bean soups, and various dips and purees. Black beans pair well with aromatics like garlic, onion, and cumin, as well as with rice, corn, citrus, and chili peppers. ChupaNote: not enough spice/bam in this for me. Next time I'll add red pepper flakes to oil, or a hot pepper to the bell pepper or use an extra spicy salsa. Stir in your favorite jarred salsa for extra zing. Also good the next day for lunch.
