Wheat germ is the nutrient-dense embryo of the wheat kernel (Triticum species), removed during the milling of refined wheat flour. Located at the base of the grain kernel, it represents approximately 2.5% of the wheat grain's weight but contains a disproportionate concentration of vitamins, minerals, and oils. The germ has a slightly sweet, nutty flavor and a tender texture; it is typically light tan to golden brown in color. When exposed to air, its high oil content (8-11%) causes it to become rancid relatively quickly, which is why refined wheat flour has the germ removed for extended shelf stability. Wheat germ is rich in unsaturated fats, particularly linoleic acid, and contains significant quantities of B vitamins, vitamin E, and minerals like zinc, magnesium, and phosphorus.

Wheat germ is primarily used as a nutritional supplement and ingredient in baking, breakfast cereals, and smoothies due to its concentrated nutrient profile.
