Combine whole wheat flour, wheat germ, baking powder, sugar, salt, and a pinch of nutmeg in a large mixing bowl, whisking together until evenly blended.

In a separate bowl, whisk together eggs, milk (or vanilla soy milk), vegetable oil, and applesauce until the wet ingredients are fully incorporated.
