Swiss cheese is a hard cheese originating from Switzerland, characterized by its distinctive large round holes (eyes) that form during the aging process. The cheese is typically made from cow's milk and undergoes a lengthy maturation period, traditionally ranging from 4 months to over a year depending on the variety. The most recognized Swiss varieties include Emmental (Emmentaler), Gruyère (Gruyère AOP), and Appenzeller. The holes form as a result of propionic acid bacteria fermenting the cheese, releasing carbon dioxide gas. The cheese has a pale yellow color, a firm and slightly elastic texture, and a complex flavor profile ranging from mildly sweet and nutty in younger cheeses to increasingly sharp, caramel-like, and crystalline in aged versions.

Culinary Uses

Swiss cheese is widely used in both traditional Swiss cuisine and international cooking. It is a cornerstone ingredient in fondue, where its melting properties and flavor complement white wine and kirsch.
