Soda, or sodium bicarbonate (NaHCO₃), is a white crystalline powder derived from naturally occurring mineral deposits or synthesized chemically. Also known as baking soda or bicarbonate of soda, this alkaline compound was first mined from trona deposits in Wyoming and other regions, though it is now produced industrially through the Solvay process. When heated or combined with acidic ingredients, soda releases carbon dioxide gas, creating the leavening effect essential to baking. It is odorless, slightly salty in taste, and dissolves readily in water.
The compound exists in nature and has been harvested for millennia, but commercial production accelerated in the 19th century. Food-grade sodium bicarbonate is distinct from washing soda (sodium carbonate), though both are alkaline compounds used across culinary and household applications.
Culinary Uses
Soda functions primarily as a leavening agent in baking, reacting with acidic ingredients such as buttermilk, lemon juice, vinegar, or brown sugar to produce carbon dioxide bubbles that aerate batters and doughs. It is essential in quick breads (soda bread, pancakes, waffles), cakes, cookies, and muffins. Beyond baking, soda is employed to tenderize meat, neutralize acidic flavors in sauces, and adjust pH in cooking liquids for beans and legumes.
