Scotch Wafers
These are well adapted for children's luncheons, and are much enjoyed by the convalescent, taken with a glass of milk.

Preheat your oven to 375°F (190°C) and lightly grease two baking sheets or line them with parchment paper.

In a large mixing bowl, cream together the butter or lard and sugar until light and well combined.

In a separate bowl, whisk together the flour, rolled oats, salt, and baking soda until evenly distributed.

Gradually add the dry ingredients to the creamed butter and sugar mixture, stirring in small amounts of water as needed to bring the dough together into a soft, workable consistency.

Drop small spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart, then flatten each portion as thinly as possible using the back of a spoon or your fingertips.

Bake in the preheated oven until the wafers are golden at the edges and crisp throughout, approximately 10 to 12 minutes.

Remove the baking sheets from the oven and allow the wafers to cool on the sheets for 2 minutes before transferring them to a wire rack to cool completely and crisp up fully.
