About

The jalapeño (Capsicum annuum var. jalapeño) is a medium-heat chili pepper native to Mexico, specifically the Xalapa region of Veracruz from which it derives its name. The fruit measures 2–3 inches in length and typically exhibits a dark green color, though specimens allowed to mature fully develop a red hue. The pepper possesses thick, juicy flesh with a crisp texture and a distinctive flavor profile combining herbaceous, fruity, and moderately spicy heat, ranging from 2,500–8,000 Scoville Heat Units (SHU).

Jalapeños are cultivated globally and exist in numerous cultivars, each with slight variations in heat level, size, and flavor. Common varieties include the Mexican jalapeño, the larger, milder TAM Jalapeño, and the Jalafuego, noted for its increased pungency. The pepper's versatility makes it suitable for consumption fresh, pickled, smoked, or dried (in which form it is known as chipotle).

Culinary Uses

Jalapeños are fundamental to Mexican cuisine and increasingly prevalent in global cooking. Fresh jalapeños are sliced and used as a garnish for tacos, ceviche, nachos, and guacamole, providing both heat and fresh flavor. They are commonly pickled (en escabeche) as a condiment and appear in salsas both cooked and raw. Jalapeños can be stuffed with cheese or other fillings to create chile relleno when roasted and peeled, or incorporated into cornbread, grilled meats, and creole dishes. The smoked, dried form (chipotle) features prominently in adobo sauce, soups, and southwestern cuisine. Roasting mellows the pepper's heat while enhancing its natural sweetness, making it approachable for those sensitive to capsaicin.
