Cut the watermelon into small, even cubes and transfer to a large mixing bowl. Ensure the pieces are bite-sized for consistent texture.

Chop the green bell peppers into small dice and add to the watermelon. Stir gently to combine.

Mince the jalapeno peppers finely, removing seeds if a milder salsa is desired, and add to the bowl. Adjust the amount between 1 to 2 tablespoons based on preferred heat level.

Chop the cilantro and green onion separately, then add both to the mixture.

Pour the lime juice over the salsa and sprinkle with garlic salt. Stir gently but thoroughly to distribute all ingredients and seasonings evenly.

Taste the salsa and adjust seasonings or heat level as needed by adding more jalapeno, lime juice, or garlic salt.

Let the salsa rest at room temperature for 5 to 10 minutes before serving to allow flavors to meld. Alternatively, refrigerate until ready to serve.
