Caraway (Carum carvi) is a biennial herb in the Apiaceae family, native to Western Asia and the Mediterranean region but now cultivated worldwide. The ingredient comprises small, crescent-shaped seeds with a distinctive ridged surface and dark brown color. Caraway seeds possess a warm, slightly sweet, and subtly anise-like flavor profile with peppery undertones and an earthy complexity. The flavor derives primarily from the essential oil carvone, which comprises 50-60% of the seed's volatile composition. The seeds are harvested from the plant's second-year flowering stage, when pods mature and dry naturally in the field before threshing.

Culinary Uses

Caraway seeds are fundamental to Central and Northern European cuisines, particularly German, Scandinavian, and Eastern European cooking. They are essential in rye bread, biscuits, and cheese preparations, and appear in meat dishes such as goulash, pork preparations, and charcuterie. The seeds flavor fermented vegetables, notably sauerkraut and pickles, and liqueurs including Kümmel and Aquavit. In Indian cuisine, caraway is used in spice blends and curries. The seeds are typically toasted briefly before use to amplify their aromatic properties, and are traditionally chewed as a digestive aid. They pair well with cabbage, root vegetables, cheese, and hearty meat dishes.
